Baked Lemon Fillets (6.5 PTS)

Serves: 2 people

Recipe Ingredients

2 teaspoons 10mlButter or margarine - melted
1/2   Fillet of sole
2 teaspoons 10mlLemon peel - finely grated
1/4 teaspoon 1.3mlSalt
1   Freshly ground pepper
2   Lemon wedges

Recipe Instructions

Spread one half of melted butter in a medium baking dish. Place fillets in dish, one layer thick. Brush with remaining butter and sprinkle with lemon peel. Season with salt and pepper. Bake in a 425 F oven 12-15 mins until fish flakes easily with a fork; fo not overcook. Serve immediately with lemon wedges.
