2 teaspoons | 10ml | Butter or margarine - melted |
1/2 | Fillet of sole | |
2 teaspoons | 10ml | Lemon peel - finely grated |
1/4 teaspoon | 1.3ml | Salt |
1 | Freshly ground pepper | |
2 | Lemon wedges |
Spread one half of melted butter in a medium baking dish. Place fillets in dish, one layer thick. Brush with remaining butter and sprinkle with lemon peel. Season with salt and pepper. Bake in a 425 F oven 12-15 mins until fish flakes easily with a fork; fo not overcook. Serve immediately with lemon wedges.
