Viv's Raisin Pie

Recipe Ingredients

2 cups 320g / 11ozRaisins
1 1/4 cups 296mlCold water
1/2 cup 118mlOrange juice
1/2 cup 80g / 2.8ozBrown sugar
2 tablespoons 30mlCornstarch
1 teaspoon 5mlCinnamon
1 teaspoon 5mlOrange rind
1/8 teaspoon 0.6mlSalt
1/4 cup 59mlWater
1 tablespoon 15mlVinegar
2 tablespoons 30mlButter
1   Pie pastry - top and bottom

Recipe Instructions

Boil raisin, first amount water, and juice, for 5 min in a covered pot.

Combine the following: brown sugar, cornstarch, cinnamon, orange rind, salt (dissolved in second amount of water). Add to cooked raisins.

Bring to boil, stirring. Remove from heat. Add vinegar and butter. Pour into unbaked pie shell. Top with other pastry.

Bake in hot oven (425F) for 25 min or until done.
