Sweet Potato-Pecan Pie

Recipe Ingredients

3   Eggs - lightly beaten
3/4 cup 148g / 5.2ozSugar
1/2 teaspoon 2.5mlSalt
1 cup 328g / 11ozLight corn syrup
1 tablespoon 15mlMelted butter
1 teaspoon 5mlPure vanilla extract
2 cups 474mlRoasted - peeled, mashed sweet potatoes
  (from about 1 pound sweet potatoes)
1 cup 237mlPecan pieces
1   Nine-inch pastry shell - unbaked

Recipe Instructions

Preheat oven to 350F.

In a bowl whisk eggs with sugar and salt. Whisk in corn syrup, butter and vanilla until thoroughly incorporated. Spread mashed sweet potato, then pecan pieces in pastry shell. Top with egg mixture. Bake until filling is set, about 1 hour.

This recipe yields 8 servings.
