Special Apple Pie

1 3/4 cups 109g / 3.8ozAll-purpose flour
1/4 cup 49g / 1.7ozSugar
1 teaspoon 5mlCinnamon
1/2 teaspoon 2.5mlSalt
1/2 cup 99g / 3.5ozButter
2 tablespoons 30mlButter
1/4 cup 59mlWater or apple cider
  Filling
8   McIntosh apples - peeled, cored and sliced
1 2/3 cups 394mlSour cream
1 cup 198g / 7ozSugar
1/3 cup 20g / 0.7ozAll-purpose flour
1   Egg
2 teaspoons 10mlVanilla
1/2 teaspoon 2.5mlSalt
  Topping
1 cup 146g / 5.1ozChopped walnuts
1/2 cup 31g / 1.1ozAll-purpose flour
1/3 cup 53g / 1.9ozBrown sugar - firmly packed
1/3 cup 65g / 2.3ozGranulated sugar
1 tablespoon 15mlCinnamon
1   Salt
1/2 cup 99g / 3.5ozButter - room temperature

Recipe Instructions

For Crust: Combine flour, sugar, cinnamon and salt in medium bowl. Cut in butter using pastry blender or 2 knives until mixture resembles coarse meal. Add water and toss mixture gently with fork until evenly moistened, Gather gently into ball. Transfer to lightly floured board and roll into circle slightly larger than a deep 10-inch pie plate. Ease pastry into pan and flute high edge. Set aside.

For filling: Preheat oven to 450F. Combine all ingredients in large bowl and mix well. Spoon into crust. Bake 10 minutes. Reduce oven temperature to 350F and continue baking until filling is slightly puffed and golden brown, about 40 minutes. (If edges of crust begin to brown too quickly, cover with strips of aluminum foil.) For topping: Meanwhile, combine walnuts, flour, sugars, cinnamon and salt in medium bowl and mix well. Blend in butter until mixture is crumbly. Spoon over pie and bake 15 minutes longer.
