Southern Sweet Potato Pie Recipe - Cooking Index
3 | Sweet potatoes (medium) | |
(about 3 3/4 cups mashed) | ||
1/4 cup | 49g / 1.7oz | Butter |
2 | Eggs - beaten | |
1/2 cup | 99g / 3.5oz | Sugar |
1/4 teaspoon | 1.3ml | Salt |
3/4 teaspoon | 3.8ml | Nutmeg |
1/2 cup | 118ml | Evaporated milk |
1 teaspoon | 5ml | Vanilla |
1 | Pastry shell - (9" unbaked) |
Scrub potatoes; place in saucepan and cover with boiling water, cook until soft. Peel potatoes while hot , mash thoroughly. Beat in butter, eggs, sugar, salt and nutmeg. Beat until creamy.
Stir in milk and vanilla. Pour into pastry shell.
Bake at 450F for 15 minutes, reduce heat to 300F and bake for 25 to 30 minutes or until set.
