Pecan Pie Squares Recipe - Cooking Index

3 cups | 187g / 6.6oz | Flour |
1/4 cup | 49g / 1.7oz | Plus 2 tablespoons sugar |
3/4 teaspoon | 3.8ml | Salt |
3/4 cup | 148g / 5.2oz | Margarine or butter - softened |
Filling | ||
4 | Eggs - slightly beaten | |
1 1/2 cups | 297g / 10oz | Sugar |
1 1/2 cups | 492g / 17oz | Karo light or dark corn - syrup |
3 tablespoons | 45ml | Margarine or butter - melted |
1 1/2 teaspoons | 7.5ml | Vanilla |
2 1/2 cups | 365g / 12oz | Chopped pecans |
For filling mix all ingredients except pecans until well blended. Stir in pecans. Heat oven to 350F. Grease jelly roll pan, 15 1/2" x 10 1/2" x 1".
Beat flour, sugar, margarine and salt in large bowl on medium speed until crumbly (mixture will be dry). Press firmly in pan.
Bake until light golden brown, about 20 minutes. Prepare filling. Pour over baked layer; spread evenly. Bake until filling is set, about 25 minutes.
Cool. Cut into 1 1/2 inch squares (70 squares).
