Pecan Pie Squares

Recipe Ingredients

  Crust
3 cups 187g / 6.6ozFlour
1/4 cup 49g / 1.7ozPlus 2 tablespoons sugar
3/4 teaspoon 3.8mlSalt
3/4 cup 148g / 5.2ozMargarine or butter - softened
  Filling
4   Eggs - slightly beaten
1 1/2 cups 297g / 10ozSugar
1 1/2 cups 492g / 17ozKaro light or dark corn - syrup
3 tablespoons 45mlMargarine or butter - melted
1 1/2 teaspoons 7.5mlVanilla
2 1/2 cups 365g / 12ozChopped pecans

Recipe Instructions

For filling mix all ingredients except pecans until well blended. Stir in pecans. Heat oven to 350F. Grease jelly roll pan, 15 1/2" x 10 1/2" x 1".

Beat flour, sugar, margarine and salt in large bowl on medium speed until crumbly (mixture will be dry). Press firmly in pan.

Bake until light golden brown, about 20 minutes. Prepare filling. Pour over baked layer; spread evenly. Bake until filling is set, about 25 minutes.

Cool. Cut into 1 1/2 inch squares (70 squares).
