Old-Fashioned Peach Cobbler Recipe - Cooking Index
1/2 cup | 80g / 2.8oz | Light-brown sugar - (packed) |
1/2 teaspoon | 2.5ml | Cinnamon - ground |
1 teaspoon | 5ml | Grated lemon rind |
1 tablespoon | 15ml | Lemon juice |
4 cups | 948ml | Peaches - sliced, peeled |
3/4 cup | 46g / 1.6oz | All-purpose flour |
1/2 cup | 31g / 1.1oz | Whole-wheat flour |
1 tablespoon | 15ml | Baking powder |
1/4 cup | 49g / 1.7oz | Butter - (1/2 stick) |
2 | Egg whites - beaten | |
1/2 cup | 118ml | Milk |
1/2 teaspoon | 2.5ml | Vanilla |
1. Preheat oven to 375F. Lightly grease 8 x 8x 2-inch baking dish.
2. Combine brown sugar, cinnamon, lemon rind and juice in a large bowl. Add peaches; toss to mix. Transfer to prepared baking dish.
3. Combine flours and baking powder on a piece of waxed paper. Beat together butter and sugar in a medium-sized bowl until light and fluffy. Beat in egg white. Add dry ingredients alternately with milk and vanilla, stirring just to combine. Drop batter by spoonfuls over peach mixture; Spread gently.
4. Bake in preheated 375F. oven for 25 to 30 minutes or until peaches are tender and crust is golden brown.
5. Serve warm.
