Mile-High Strawberry Pie Recipe - Cooking Index
10 oz | 284g | Frozen strawberries or raspberries - thawed |
1/2 cup | 99g / 3.5oz | Sugar - or to taste |
1 tablespoon | 15ml | Lemon juice |
2 tablespoons | 30ml | Egg whites (large) |
3/4 cup | 177ml | Whipping cream |
1 | Baked pie shell or crust |
In a large bowl, combine berries, sugar, lemon juice, and egg whites. Beat with an electric mixer until soft peaks form and mixture is very thick (15 to 20 minutes).
In a separate bowl, whip the cream to soft peaks and fold into berry mixture.
Gently pile filling high in pie crust and freeze until firm.
About 30 minutes before serving, transfer pie from freezer to refrigerator.
