Lemon Sponge Pie Recipe - Cooking Index
1 | Lemon - juice and rind | |
1 cup | 198g / 7oz | Sugar |
3 tablespoons | 45ml | Flour |
3 | Eggs - separated | |
2 tablespoons | 30ml | Butter |
1 1/2 cups | 355ml | Hot milk |
1/2 teaspoon | 2.5ml | Salt |
1 | Pie shell |
Cream butter and sugar. Add egg yolks and beat well.
Add flour, salt, lemon juice and grated rind.
Fold in stiffly beaten egg whites.
Pour into unbaked pie shell and bake at 325F for 45 minutes.
