Lemon Icebox Pie - 2 Recipe - Cooking Index
1 | Sweetened condensed milk | |
3 | Eggs - separated | |
1/2 cup | 118ml | Lemon juice |
1 teaspoon | 5ml | Grated lemon rind |
1/4 teaspoon | 1.3ml | Cream of tartar |
1/3 cup | 65g / 2.3oz | Sugar |
Beat egg yolks, and stir in condensed milk, lemon juice and grated rind. Mix well. Pour into pie shell (baked or crumb).
For the meringue, beat egg whites with cream of tartar until foamy. Add sugar gradually, beating until stiff, but not dry. Cover filling with meringue.
Bake at 350, ten minutes or so, until meringue is lightly browned. Keep chilled in icebox.
