Fresh Peach Cobbler - 2 Recipe - Cooking Index
1 cup | 198g / 7oz | Sugar |
3 tablespoons | 45ml | Cornstarch |
1/2 teaspoon | 2.5ml | Cinnamon |
2 tablespoons | 30ml | Butter |
6 tablespoons | 90ml | Peaches - sliced (large) |
Topping | ||
1 cup | 62g / 2.2oz | Flour |
1/3 cup | 65g / 2.3oz | Shortening |
2 tablespoons | 30ml | Sugar |
1 1/2 teaspoons | 7.5ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
1/4 cup | 59ml | Milk |
1 | Egg - slightly beaten | |
1 tablespoon | 15ml | Sugar |
Combine sugar, cornstarch and cinnamon and sprinkle over fruit, tossing to mix.
Melt 2 tablespoons butter in an 8 by 8" baking dish and add fruit.
In a bowl, place flour, sugar baking powder and salt.
Toss to mix, then cut in shortening with a pastry blender until crumbly.
Combine egg with milk and stir into dry ingredients.
Drop batter by spoonfuls onto fruit.
Sprinkle batter with the 1 tablespoon of sugar.
Bake at 375 for 25 to 30 minutes or until topping is golden brown and crusty.
