1 1/2 cups | 297g / 10oz | Sugar |
1 | Salt | |
1/2 cup | 99g / 3.5oz | Butter; softened |
1/4 cup | 15g / 0.5oz | Flour |
1/2 cup | 118ml | Milk |
1 cup | 93g / 3.3oz | Shredded coconut |
1 | Pastry shell, unbaked |
Preheat oven to 325F.
Beat eggs and gradually add sugar and salt; beat until thick and lemon colored. Blend in butter; then flour and milk. Add coconut.
Spoon into pastry shell and bake for 45 minutes to 1 hour or until set and slightly browned
