Caribbean Fudge Pie

Recipe Ingredients

1/4 cup 49g / 1.7ozButter or regular margarine
3/4 cup 120g / 4.2ozBrown sugar - firmly packed
3 cups 594g / 20ozEggs (large)
12 oz 340gChocolate chips - melt and cool
2 teaspoons 10mlInstant coffee powder
1 teaspoon 5mlRum flavoring
1/4 cup 15g / 0.5ozUnbleached flour
1 cup 146g / 5.1ozWalnuts - coarsely chopped
1   Unbaked 9" pie shell
1   Walnut halves

Recipe Instructions

Cream the butter and brown sugar together in a bowl until light and fluffy, using an electric mixer at medium speed. Add the eggs, one at a time, beating well after each addition. Add the cooled chocolate, coffee powder, and rum flavoring, blending well.

Stir in the flour and the chopped walnuts and turn into the unbaked pie shell. Arrange the walnut halves in a circle around the edge of the pie.

Bake in a preheated 375F oven for 25 minutes or until set around the edge.

Cool on a wire rack.
