Bob Hope's Lemon Pie Recipe - Cooking Index
1 cup | 198g / 7oz | Sugar |
2 tablespoons | 30ml | Sugar |
3 tablespoons | 45ml | Cornstarch |
1 cup | 237ml | Boiling water |
2 tablespoons | 30ml | Butter |
1 | Salt | |
4 tablespoons | 60ml | Lemon juice |
4 | Egg yolks | |
Grated rind of 1 lemon | ||
3 | Egg whites | |
Baked pie shell | ||
2 tablespoons | 30ml | Sugar |
Combine cornstarch and sugar, add water slowly, stirring constantly, until thick and smooth.
Add slightly beaten egg yolks, butter, lemon rind and juice and salt,.
Cook 2-3 minutes. Pour into baked shell.
Cover with meringue made from 3 egg whites, beaten stiff and 2 tbsp sugar.
Bake in slow oven 15 minutes until brown.
