Baked Fresh Cherry Pie

Recipe Ingredients

1   Unbaked double crust
4 tablespoons 60mlQuick cooking tapioca
1/8 teaspoon 0.6mlSalt
1 cup 198g / 7ozWhite sugar
4 cups 250g / 8.8ozPitted cherries
1/4 teaspoon 1.3mlAlmond extract
1/2 teaspoon 2.5mlVanilla extract
1 1/2 tablespoons 22mlButter or margarine

Recipe Instructions

Preheat oven to 400F. Place bottom crust in pie pan. Set top crust aside, covered. In a large mixing bowl combine tapioca, salt, sugar, cherries and extracts. Let stand 15 minutes. Turn out into bottom crust and dot with butter.

Cover with top crust, flute edges and cut vents in top. Place pie on a foil lined cookie sheet --- in case of drips! Bake for 50 minutes.
