Three Cheese Manicotti Recipe - Cooking Index

| 2 cups | 474ml | Shredded mozzarella |
| 1 cup | 237ml | Cream-style cottage cheese |
| 1/2 cup | 118ml | Grated parmesan |
| 2 | Eggs - beaten | |
| 1/4 cup | 59ml | Snipped parsley |
| 1/2 teaspoon | 2.5ml | Salt |
| 1/8 teaspoon | 0.6ml | Pepper |
| 8 | Manicotti shells - cooked | |
| - and drained |
Blend tomato sauce, spaghetti sauce mix and 1 1/2 cups water. Simmer uncovered 10-12 minutes. Combine 1 cup mozzarella, cottage cheese and parmesan. Add eggs, parsley, salt and pepper. Mix lightly. Stuff manicotti shells with cheese mix, using 1/4 cup for each. Pour 1/2 cup of sauce mix in 12 x 7 1/2 x 2 inch baking dish. Arrange manicotti in dish, pour remaining sauce on top. Sprinkle with remaining mozzarella. Bake uncovered at 350 til bubbly-about 25-30 minutes. Serves 6.
