8 oz | 227g | Leonardo veggie spirelli - cooked and drained |

4 1/2 teaspoons | 22ml | Minced onion |
2 tablespoons | 30ml | Vinegar |
1 cup | 237ml | Diet mayonnaise |
1 3/4 teaspoons | 8.8ml | Salt - (optional) |
1/4 teaspoon | 1.3ml | Pepper |
2 teaspoons | 10ml | Paprika |
3 teaspoons | 15ml | Tomatoes - cut in wedges (medium) |
1/2 cup | 73g / 2.6oz | Chopped green pepper |
2 tablespoons | 30ml | Pitted black olives |
3 | Hard-cooked eggs - sliced | |
2 tablespoons | 30ml | Snipped parsley |
Combine the onion and vinegar and let it stand for a few minutes. Then add the mayonnaise, salt, pepper and paprika and mix well. Mix the veggie spirelli, tomatoes, green pepper, and olives in a large salad bowl; and pour the mayonnaise mixture over all. Toss lightly. Chill the salad for several hours before serving. When serving, garnish with the egg slices and parsley. Makes 6 servings.
