Summer Tomato Sauce Recipe - Cooking Index
6 | Plum tomatoes - cut 1/4" ddice | |
1/2 cup | 73g / 2.6oz | Black olives - pitted, coarsely chopped |
3 | Scallions - sliced | |
1 | Garlic - finely minced | |
Salt - to taste | ||
Freshly ground black pepper - to taste | ||
8 | Fresh basil leaves - slivered | |
1/4 cup | 59ml | Olive oil |
1/2 lb | 227g / 8oz | Penne - ziti or fusilli pasta, cooked al dente |
In a large bowl combine tomatoes, olives, scallions, garlic, salt, pepper and slivered basil. Gently toss in the olove oil. Let rest, covered for at least 2 hours for flavors to develop. To serve, toss the cooked pasta into the prepared sauce and serve at room temperature
