Sausage Soup

Recipe Ingredients

4 cups 948mlBeef broth
2   Garlic - minced
1   Tomato puree
1 1/2 cups 93g / 3.3ozOnions - chopped
1 1/2 cups 219g / 7.7ozGreen pepper - chopped
1 tablespoon 15mlOregano chopped
1 tablespoon 15mlParsley chopped
1 tablespoon 15mlBasil chopped
3 lbs 1362g / 48ozHot italian sausage 1"chunks
  Parmesan cheese
  Rotelli macaroni
1 cup 237mlRed wine
1 cup 110g / 3.9ozCelery with tops chopped

Recipe Instructions

Cook the sausage in a large soup pot. Brown well on all sides. Remove the meat and reserve enough fat to saute the onions, pepper, celery and garlic. Saute until the onions are translucent. Add the meat and the rest of the ingredients except the cheese and macaroni. Simmer about 1 hour and serve with cooked rotelli and parmesan cheese.
