Rice Pizza

Recipe Ingredients

  Crust
3 cups 480g / 16ozCooked rice - ( brown or white)
2   Eggs
1 cup 146g / 5.1ozMozzarella cheese - grated
1   Salt and pepper
1/2 teaspoon 2.5mlDry mustard
  Sauce
1 1/2 tablespoons 22mlMargarine
3 tablespoons 45mlFlour
1 1/2 cups 355mlMilk
1   Chicken bouillon cube - crushed
1/2 teaspoon 2.5mlEach; oregano and basil
1/4 teaspoon 1.3mlGarlic powder
  Topping: - (optional)
  Assorted chopped vegetables
1 1/2 cups 219g / 7.7ozMozzarella cheese

Recipe Instructions

CRUST: Mix together thoroughly. Spread onto 10 X 15 cookie sheet. Bake 10 minutes at 350F(Can make ahead).

SAUCE: Melt margarine in a saucepan, mix in flour with a whisk or a fork. Add milk and thicken, stirring smooth. Add other ingredients. Cool slightly, Spread over rice crust (Can make ahead and chill). Top with small pieces of vegetables: cauliflower, broccoli,zucchini,peppers, tomatoes, mushrooms, onions,- whatever you like. Then top with as much Mozza cheese as you like - about 1 1/2 cups grated. Bake at 400F for 20-25 minutes.
