Crust | ||
3 cups | 480g / 16oz | Cooked rice - ( brown or white) |
2 | Eggs | |
1 cup | 146g / 5.1oz | Mozzarella cheese - grated |
1 | Salt and pepper | |
1/2 teaspoon | 2.5ml | Dry mustard |
Sauce | ||
1 1/2 tablespoons | 22ml | Margarine |
3 tablespoons | 45ml | Flour |
1 1/2 cups | 355ml | Milk |
1 | Chicken bouillon cube - crushed | |
1/2 teaspoon | 2.5ml | Each; oregano and basil |
1/4 teaspoon | 1.3ml | Garlic powder |
Topping: - (optional) | ||
Assorted chopped vegetables | ||
1 1/2 cups | 219g / 7.7oz | Mozzarella cheese |
CRUST: Mix together thoroughly. Spread onto 10 X 15 cookie sheet. Bake 10 minutes at 350F(Can make ahead).
SAUCE: Melt margarine in a saucepan, mix in flour with a whisk or a fork. Add milk and thicken, stirring smooth. Add other ingredients. Cool slightly, Spread over rice crust (Can make ahead and chill). Top with small pieces of vegetables: cauliflower, broccoli,zucchini,peppers, tomatoes, mushrooms, onions,- whatever you like. Then top with as much Mozza cheese as you like - about 1 1/2 cups grated. Bake at 400F for 20-25 minutes.
