Pizzocheri Pasta Basic Recipe

Recipe Ingredients

2 cups 125g / 4.4ozBuckwheat flour
1 1/2 cups 93g / 3.3ozUnbleached white flour
4   Jumbo eggs
1/2 tablespoon 7.5mlOil
1   Salt

Recipe Instructions

Make pasta in regular way using well method. Roll into sheets on thinnest setting and then cut sheets into horizontal strips 1 inch thick. Cut across the strips in 2 inch intervals to yield 2 inch long and 1 inch tall strips. These are pizzocheri. Yield: 4 servings
