1 lb | 454g / 16oz | Ditalini or orzo - or other small pasta |

4 oz | 113g | Cooked turkey ham - diced into 1/4-inch |
1/2 cup | 73g / 2.6oz | Swiss cheese - diced into 1/4-inch |
3 | Celery stalks - chopped | |
3 | Scallions - sliced | |
1/2 cup | 31g / 1.1oz | Diced red onion |
1/4 cup | 36g / 1.3oz | Diced black olives |
Salt | ||
Freshly ground pepper | ||
1/4 cup | 59ml | Dijon mustard |
2 tablespoons | 30ml | Vegetable oil |
1/4 cup | 59ml | White wine vinegar |
Prepare pasta according to package directions; drain, rinse with cold water and drain again Place the pasta, turkey ham, cheese, celery, scallions, onion and olives in a mixing bowl. Season with salt and freshly ground pepper to taste.
In a small bowl, mix the mustard, vegetable oil and vinegar until combined. Add to the pasta and toss. Refrigerate for two hours and serve chilled.
