Honey Cookies Recipe - Cooking Index

3/4 cup | 148g / 5.2oz | Sugar |
2/3 cup | 157ml | Honey |
3/4 cup | 69g / 2.4oz | Sliced almonds |
2 1/2 cups | 156g / 5.5oz | Flour - sifted |
1/2 teaspoon | 2.5ml | Cinnamon |
1/2 teaspoon | 2.5ml | Ginger |
1/2 teaspoon | 2.5ml | Nutmeg |
1/4 teaspoon | 1.3ml | Baking soda |
1/2 cup | 73g / 2.6oz | Chopped candied fruit peel |
Beat the eggs and sugar together until fluffy. Beat in the honey and then the nuts. Sift together the flour, cinnamon, ginger, nutmeg and baking soda. Work into the honey mixture and add the candied fruit. Form into a ball and chill.
Roll out as thin as possible and cut into shapes. Place on a greased cooky sheet.
Bake in a 350 degree oven 15 minutes or until browned. Makes about 36 three-inch cookies.
