Green Noodle Pudding

Recipe Ingredients

4   Egg yolks
4 tablespoons 60mlChopped scallions
1 1/2 cups 219g / 7.7ozCooked chopped spinach
1/2 lb 227g / 8ozFine noodles - cooked and drained
1 teaspoon 5mlSalt
4   Egg whites - stiffly beaten

Recipe Instructions

Beat the egg yolks, then stir in the scallions, spinach, noodles and salt. Fold in the egg whites. Pour into a 1 1/2-quart greased baking dish.

Bake in a 350 degree oven 30 minutes. Serve hot with meat or dairy dishes. Serves 4 to 6.
