Chicken 'n' Broccoli-Topped Orzo Recipe - Cooking Index
2 teaspoons | 10ml | Olive oil -- |
1 | Garlic clove - minced | |
1/2 lb | 227g / 8oz | Chicken breast - cut in cubes |
1 cup | 146g / 5.1oz | Broccoli flowerets - blanched |
1 cup | 237ml | Chicken broth -- |
1/4 teaspoon | 1.3ml | Salt -- |
1/8 teaspoon | 0.6ml | Pepper -- |
1 1/2 oz | 42g | Orzo - uncooked |
1 tablespoon | 15ml | Parmesan cheese - grated |
Cook pasta according to package directions.
In a 10-inch skillet or wok heat oil over high heat; add garlic and Saute for 1 minute. Add chicken and cook, stirring quickly and frequently, until chicken is no longer pink, about 5 minutes. Add broccoli, broth, salt, and pepper and let cook until chicken is tender and mixture is heated through, 3 to 5 minutes. Serve over hot orzo and sprinkle with Parmesan cheese.
