2 oz | 56g | Garlic clove - minced (medium) |
1/4 cup | 59ml | -- (s) |
1/4 teaspoon | 1.3ml | Cayenne pepper |
3 cups | 438g / 15oz | Eggplant, chopped |
3 cups | 187g / 6.6oz | Tomato canned |
1/2 teaspoon | 2.5ml | Basil |
1/2 teaspoon | 2.5ml | Oregano |
Vegetable stock | ||
Onion - chopped |
Cook pasta al dente. Heat garlic, onion, and pepper in broth. Simmer 5 minutes. Add eggplant and simmer until soft. Add tomatoes, and spices. Simmer 20 minutes. Toss with pasta.
