West Indian Marinade Recipe - Cooking Index
1 | White onion - finely chopped | |
1 | Green pepper - seeded and finely chopped | |
1 | Scotch bonnet pepper - seeded and finely | |
2 | Garlic - minced | |
1 teaspoon | 5ml | Salt |
1 teaspoon | 5ml | Freshly ground black pepper |
1/2 cup | 118ml | Chicken stock |
1/2 cup | 118ml | White wine vinegar |
One lime - juice of | ||
1 teaspoon | 5ml | Sweet paprika |
1 teaspoon | 5ml | Dried oregano |
2 sections | Fresh coriander - finely chopped | |
2 sections | Fresh parsley - finely chopped |
In a large bowl, combine all the ingredients to form a paste. Cover and refrigerate.
