West Indian Marinade

Recipe Ingredients

1   White onion - finely chopped
1   Green pepper - seeded and finely chopped
1   Scotch bonnet pepper - seeded and finely
2   Garlic - minced
1 teaspoon 5mlSalt
1 teaspoon 5mlFreshly ground black pepper
1/2 cup 118mlChicken stock
1/2 cup 118mlWhite wine vinegar
  One lime - juice of
1 teaspoon 5mlSweet paprika
1 teaspoon 5mlDried oregano
2 sections  Fresh coriander - finely chopped
2 sections  Fresh parsley - finely chopped

Recipe Instructions

In a large bowl, combine all the ingredients to form a paste. Cover and refrigerate.
