Achiote Marinade/Mop Recipe - Cooking Index
2 cups | 474ml | Cider vinegar |
24 oz | 681g | Beer |
4 tablespoons | 60ml | Achiote paste |
2 tablespoons | 30ml | Black pepper |
1 tablespoon | 15ml | Granulated garlic |
3 tablespoons | 45ml | Pequin pepper flakes |
2 tablespoons | 30ml | Dry mustard |
1/4 cup | 59ml | Ground New Mexican chile |
1 tablespoon | 15ml | Oregano |
1 tablespoon | 15ml | Cumin seed - roasted and ground |
4 tablespoons | 60ml | Trappeys Mexi-pep or Tabasco or |
2 tablespoons | 30ml | Kosher salt |
Mix all ingredients in a non reactive bowl. Use as a marinade or mop.
