Achiote Marinade/Mop Recipe - Cooking Index
| 2 cups | 474ml | Cider vinegar | 
| 24 oz | 681g | Beer | 
| 4 tablespoons | 60ml | Achiote paste | 
| 2 tablespoons | 30ml | Black pepper | 
| 1 tablespoon | 15ml | Granulated garlic | 
| 3 tablespoons | 45ml | Pequin pepper flakes | 
| 2 tablespoons | 30ml | Dry mustard | 
| 1/4 cup | 59ml | Ground New Mexican chile | 
| 1 tablespoon | 15ml | Oregano | 
| 1 tablespoon | 15ml | Cumin seed - roasted and ground | 
| 4 tablespoons | 60ml | Trappeys Mexi-pep or Tabasco or | 
| 2 tablespoons | 30ml | Kosher salt | 
Mix all ingredients in a non reactive bowl. Use as a marinade or mop.
