Wash rice thoroughly and drain, heat ghee in a heavy based or non stick pan. Once hot add cinnamon sticks,cardamom seeds, cloves, and fry for a minute add the raisins. Once raisins have puffed up add the rice and stir well so all the rice is coated. Add enough water to cook the rice in. Then take the saffron gently heat in the teaspoon (don't burn it!) crush it and add to the water.
The Indian way of measuring is to stick your finger in, put it just on top of the rice add water till about 3/4 way up your finger. It is easier to add less to start with and then add more if the rice is not cooked then the other way around. Once rice is cooked add the sugar and stir well cook again on slow heat making sure it doesn't stick for about 5-7 minutes.
Your rice is now done, garnish with almonds, more cardamom seeds and serve hot.
