2 tablespoons | 30ml | Tomatoes - diced (medium) |
2 cups | 320g / 11oz | Cooked chickpeas - (garbanzo beans) |
1 tablespoon | 15ml | Curry paste |
1/2 cup | 118ml | Liquid from beans or vegetable stock |
1/4 teaspoon | 1.3ml | Sea salt |
Sweet potatoes give this brightly colored curry its creamy texture. Pair it with wild rice and steamed leafy greens to create a tasty dish that's quick and easy to prepare.
Prep Time: 10 minutes Cooking Time: 25 minutes
1. Steam sweet potatoes 20 minutes until just tender.
2. In a medium skillet, saute onions in 3 tablespoons vegetable stock 2 to 3 minutes.
3. Add steamed sweet potatoes, chickpeas, tomatoes, curry paste, liquid and salt to sauteed onions. Bring to a boil; reduce heat, cover and simmer 7 minutes.
