Spinach Croquettes

Recipe Ingredients

4   Spinach leaves - chopped & cooked in 2 tsp butter
3   Potatoes - boiled and mashed
2   Eggs - - (beaten)
1/4 teaspoon 1.3mlNutmeg
1 tablespoon 15mlCornflour
1 tablespoon 15mlBreadcrumbs
  Salt & pepper to taste
  Oil as required

Recipe Instructions

Combine the mashed potato with nutmeg, salt and pepper. Cook on a low flame, stir in egg and mix well. Add the spinach leaves.

Shape the mixture into croquettes. Roll them in cornflour, dip in the other egg, roll in bread crumbs and fry. Serve hot.
