Pulikkaachal (Tamarind Chutney) Recipe - Cooking Index
| An orange-sized tamarind ball | ||
| 1 tablespoon | 15ml | Jaggery - powdered |
| 1 teaspoon | 5ml | Turmeric |
| 12 | Green chiles - chopped | |
| 4 sections | Curry leaves - chopped | |
| 1 | Ginger - chopped | |
| Salt - to taste | ||
| For Seasoning | ||
| 1 teaspoon | 5ml | Black mustard seeds |
| 1 teaspoon | 5ml | Black gram dal |
| 3 | Red chiles - broken | |
| 4 tablespoons | 60ml | Oil |
Extract juice from tamarind. Heat oil and add mustard seeds, black gram dal and red chiles. When brown, add green chiles and curry leaves and fry for a couple of minutes. Now add tamarind juice, jaggery, turmeric, salt and ginger. Cook until mixture is thick. - - - - - - - - - - - - - - - - - -
