Melon-Pineapple Salsa

Recipe Ingredients

1 1/2 cups 219g / 7.7ozDiced cantaloupe, honeydew, or other melon
1/2 cup 73g / 2.6ozDiced fresh pineapple
1 teaspoon 5mlSeeded and minced serrano chile
1/4 cup 15g / 0.5ozFinely diced red onion
2 tablespoons 30mlOlive oil
1/2 teaspoon 2.5mlFinely minced garlic
1 tablespoon 15mlRaspberry vinegar
1 tablespoon 15mlFresh lemon or lime juice
1/2 teaspoon 2.5mlHoney
  Kosher salt - to taste
  Freshly ground black pepper - to taste
2 tablespoons 30mlMinced fresh cilantro

Recipe Instructions

Gently combine the melon, pineapple, serrano and onion in a bowl.

In a separate bowl, whisk together the olive oil, garlic, vinegar, lemon juice and honey. Season to taste with salt and pepper. Just before serving, combine the oil mixture with the fruit and gently toss with the cilantro.
