Pilau Recipe - Cooking Index
2 cups | 320g / 11oz | Uncooked rice |
2 | Onions - (approx 1cup full), finely chopped | |
Sultanas and almonds - for garnish | ||
1 | Garlic - (or), finely chopped | |
1 teaspoon | 5ml | Minced garlic |
4 cups | 948ml | Boiling water |
2 tablespoons | 30ml | Ghee or butter |
2 tablespoons | 30ml | Sesame oil |
Salt - to taste | ||
1 1/2 teaspoons | 7.5ml | Garam masala |
Your choice of meats and vegetables |
Fry meats (not veges) until thoroughly brown. Heat ghee/butter in saucepan, fry onions and garlic until soft and slightly golden. Add rice to saucepan and fry over medium fire for approx 3-4 mins. Add salt and garam masala and fry for approx 1/2 minute. Add boiled water and bring to boil. Reduce to low heat and simmer for approx 10 minutes or until rice is cooked but still firm (not raw!). Add vegetables and cooked meat to dish. Cook until veges are tender or cooked to your liking. Drain water from rice and serve on a platter with a garnishing of sultanas and almonds.
