2 | Cinnamon - (2 inch) | |

1 teaspoon | 5ml | Red chile powder |
1 teaspoon | 5ml | Cardamom powder |
1 tablespoon | 15ml | Ginger - julienne |
One lemon - juice of | ||
2 cups | 474ml | Roughly chopped canned tomatoes with juice |
2 | Chopped green chiles | |
1/3 cup | 48g / 1.7oz | Chopped coriander |
1/2 cup | 118ml | Cream |
2 tablespoons | 30ml | Oil |
Salt - to taste | ||
1/2 teaspoon | 2.5ml | Roasted cumin powder - for garnish |
1 tablespoon | 15ml | Chopped coriander leaves - for garnish |
1 tablespoon | 15ml | Cream - for garnish |
Cook the tomatoes with sugar, red chile powder, cardamom powder, cinnamon for about 5 minutes. Cool, remove cinnamon and blend until smooth.
Heat oil and cook the tomato puree for a few minutes with ginger, green chiles, lemon and coriander. Add salt and then add the paneer cubes.
Reduce the heat, add the cream and stir. Taste and adjust seasoning. Garnish with a swirl of cream, roasted cumin powder and coriander leaves.
