Paita Na Bhajia (Vegetable Fried Fritters) Recipe - Cooking Index
1 cup | 237ml | Thinly sliced potatoes |
1 cup | 62g / 2.2oz | Chickpea flour |
Water - as required | ||
Salt - to taste | ||
1 teaspoon | 5ml | Turmeric powder |
1/4 teaspoon | 1.3ml | Citric acid or vinegar |
1/4 cup | 59ml | Plain yogurt |
1 teaspoon | 5ml | Red chilli powder |
1 teaspoon | 5ml | Fenugreek seeds - (ajma), optional |
Oil - to deep fry |
Make a smooth batter by putting chickpea flour and the rest of the ingredients except the potatoes. Once made, dip the potatoes in the batter and deep fry until golden. You don't have to use potatoes, you can use any vegetable you like from chillies to cauliflower they all taste really great with hot west Indian sauce or just ketchup.
