Nectarine Ginger Chutney Recipe - Cooking Index
3/4 lb | 340g / 11oz | Fresh ginger - minced |
6 cups | 1188g / 41oz | Granulated sugar |
3 cups | 711ml | Cider vinegar |
6 | Garlic - mashed | |
8 lbs | 3632g / 128oz | Nectarines - (about 24 medium), pitted and cubed |
2 | Onions - chopped (medium) | |
1 1/2 cups | 355ml | Lemon juice |
1 cup | 160g / 5.6oz | Golden raisins |
1 cup | 160g / 5.6oz | Raisins |
Cover ginger with water in a saucepan and bring to a boil, turn down heat and simmer until tender, 35-40 minutes. In a large non-aluminum pot, mix ginger water, ginger, sugar, vinegar, and garlic. Bring to a boil and add remaining ingredients. Cook until thick, about 1 1/2 hours.
