Narangi Ka Halva (Orange Halva) Recipe - Cooking Index
3 | Juicy oranges (large) | |
3/4 cup | 148g / 5.2oz | Caster sugar |
3 tablespoons | 45ml | Ghee |
8 | Almonds | |
1 tablespoon | 15ml | Raisins |
1/2 cup | 118ml | Semolina |
2 | Green cardamoms | |
850 | Milk |
Squeeze the juice from the oranges and add the sugar to it. Heat the ghee in a heavy based pan add the sliced almonds and raisins and gently fry for a minute. Add the semolina and fry till the semolina turns golden brown. Keep stiring as to cook the semolina evenly. Crush the cardamoms and add to the pan with the milk and simmer till the mixture thickens. You will see the semolina will expand in the milk. The mixture when it thickens should have the consistancy of mashed potatoes (but not lumpy!;) Now add the orange juice and cook till the mixture thickens again. Serve hot or cold.
Halvas are usualy served as a sweet dish after the main course. If you serve it as a pudding you should serve it hot, decorated with sliced almonds.
