Madhur Jaffrey's Broiled Fish With Garlic And Tomato Recipe - Cooking Index
2 3/4 lbs | 1248g / 44oz | Red snapper or sea bass or sole - filleted |
3 | Plum tomatoes from a can - chopped | |
Salt and pepper | ||
1 | Garlic - minced | |
1/2 | Green chile - minced | |
3 tablespoons | 45ml | Olive oil |
1 tablespoon | 15ml | Fresh parsley - chopped |
Preheat broiler.
Lay the 4 fish pieces out in a broiling pan, skin side down. Sprinkle the tomatoes, salt, pepper, garlic, and chili over the top. Dribble oil all along the lengths of the fish pieces.
Broil for 7 to 8 minutes or until nicely browned on the top and cooked through. Baste now and then with the juices in the tray.
Garnish with the parsley before serving.
NOTE: This recipe is for 2 small red snapper, sole, or sea bass - hence the 4 pieces after the fish are filleted.
