Madhur Jaffrey's Broccoli With Garlic And Mustard Seeds Recipe - Cooking Index
2 lbs | 908g / 32oz | Broccoli |
5 tablespoons | 75ml | Olive oil |
2 teaspoons | 10ml | Yellow mustard seed |
3 | Garlic - minced | |
Salt |
Cut the broccoli into equal-sized slim spears, peeling the stalk when necessary.
Set up your equipment for steaming. I just heat water in the bottom of a large pot and set a colander over the water. Cover and steam the broccoli over high heat for 5 minutes or until tender-crisp. Remove from heat and rinse immediately under cold water to set the color. Drain well.
Just before eating, heat the oil in a frying pan over a medium-high flame. When hot, put in the mustard seeds. They will start popping. Now put in the garlic and stir once. Put in the broccoli and about 1/2 tsp. salt, stirring gently to mix. Saute for about 1 minute or until heated through and glistening.
Serve immediately.
