Exotic Bean Hummus Recipe - Cooking Index
2 cups | 320g / 11oz | Cooked white beans |
1 tablespoon | 15ml | Tahini (sesame butter) |
1 tablespoon | 15ml | Chopped garlic |
3 tablespoons | 45ml | Fresh lemon juice |
2 tablespoons | 30ml | Chopped parsley |
1 teaspoon | 5ml | Chopped mint - optional |
1 teaspoon | 5ml | Whole grain mustard |
1/4 teaspoon | 1.3ml | Hot pepper sesame oil - or to taste |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
In a food processor or blender add all the ingredients except the sesame oil and salt and pepper and process until smooth. Add the hot sesame oil and the salt and pepper to taste and combine with a couple of short bursts. Thin if desired with some of the bean cooking liquid, water or buttermilk.
Store covered in refrigerator for up to 5 days.
This recipe yields about 2 cups of hummus.
