Curried Peas And Potatoes Recipe - Cooking Index
2 1/4 teaspoons | 11ml | Ginger root - chopped |
2 1/2 teaspoons | 12ml | Garlic - chopped |
1/2 cup | 31g / 1.1oz | Chopped onion |
1/4 teaspoon | 1.3ml | Salt |
1 tablespoon | 15ml | Ground cumin |
1/2 teaspoon | 2.5ml | Ground turmeric |
1 1/2 teaspoons | 7.5ml | Ground coriander |
1/4 teaspoon | 1.3ml | Cayenne pepper |
3 teaspoons | 15ml | Tomatoes (medium) |
1 teaspoon | 5ml | Potato - cubed (large) |
3/4 cup | 177ml | Water |
3 cups | 711ml | Frozen peas |
Saute on water: ginger root, garlic, onion, salt. When onions are done, add cumin, turmeric, coriander, pepper. Cook 5 minutes, until liquid evaporates. Add potato and water. Stir and bring to a boil. Simmer, covered, 10 minutes. Add frozen peas and simmer 5 minutes or until potatoes and peas are tender. Garnish with 1 Tbsp chopped cilantro.
