Cucumber Cool Down Recipe - Cooking Index
2 cups | 474ml | Plain low-fat yogurt |
1 cup | 146g / 5.1oz | Finely chopped cucumber - peeled if desired |
2 tablespoons | 30ml | Chopped fresh mint or parsley - (or) |
1 tablespoon | 15ml | Dried mint or parsley |
In a small mixing bowl, combine all of the ingredients. Cover and chill until ready to serve.
NOTE: This is a comforting companion to almost any highly spiced dish. Spoon it over the top or serve it on the side.
