2 tablespoons | 30ml | Tomatoes - chopped (medium) |
5 tablespoons | 75ml | Potatoes - cubed (medium) |
2 1/2 cups | 400g / 14oz | Green beans - cut into 1 1/2" pcs |
1 tablespoon | 15ml | Basil |
2 | Dried red chiles | |
4 sections | Fresh coriander | |
1/2 teaspoon | 2.5ml | Turmeric |
1/8 teaspoon | 0.6ml | Asafetida |
1 tablespoon | 15ml | Salt |
1 | D black pepper | |
6 tablespoons | 90ml | Ghee |
2 2/3 cups | 631ml | Water |
Place all the ingredients into a large heavy bottomed pot in the order in which they are listed. Bring to a boil over a moderate heat, reduce heat and boil for 5 minutes. Reduce the heat further and gently boil, partially covered, for 20 to 25 minutes. Check that the water is not evaporating too quickly. You may have to add more water.
To finish cooking, raise the heat to fairly high and fry quickly, without stirring, to allow the crust to form and just begin to char. Remove from the heat and let stand, covered for 5 minutes. Stir in the crust and serve, remembering to remove the red chiles, you may not want to bite into them.
