3 1/2 cups | 218g / 7.7oz | Whole wheat flour - (1 lb) |
2 teaspoons | 10ml | Ghee |
2 tablespoons | 30ml | Coriander leaves - , chopped fine |
Salt | ||
2 teaspoons | 10ml | Celery seeds |
Corn oil - , for brushing |
COOKING TIME: 30 minutes.
PREPARATION: 1. Make a soft dough with the flour, ghee, coriander, salt, celery seeds and water as needed.
2. Divide the dough into equal-sized balls about 1 inch in diameter. Roll out each ball into a flat disc, dusting the board with flour.
3. Heat a griddle and place the roti on it. Reduce the heat and cook until little bubbles appear on the surface. Turn over and do the other side, brushing the roti with oil.
4. Continue with all the rotis in this manner.
SERVE hot with a curry, yogurt and savoury pickle.
NOTE: This recipe is from the north and is one of the countless rotis made there.
