Basil-Mint Pesto Recipe - Cooking Index
1/2 cup | 20g / 0.7oz | Loosely-packed mint leaves |
3/4 cup | 30g / 1.1oz | Tightly-packed basil leaves |
3 tablespoons | 45ml | Lightly-toasted pine nuts |
1 tablespoon | 15ml | Roasted Garlic - see * Note |
1/2 cup | 118ml | Olive oil |
Kosher salt - to taste | ||
Freshly ground black pepper - to taste |
* Note : see the "Roasted Garlic" recipe which is included in this collection.
In a blender or food processor, combine the mint, basil, pinenuts, and Roasted Garlic. With the machine running, slowly add the olive oil to make a smooth paste. Season to taste with salt and pepper.
