Caribbean Curry Saucen Influence Recipe - Cooking Index
1 | Scallion - chopped | |
1/4 cup | 59ml | Vegetable oil |
2 tablespoons | 30ml | Flour |
1 tablespoon | 15ml | Curry powder |
1/4 teaspoon | 1.3ml | Ground cumin - turmeric, allspice, ginger |
And -- | ||
Black pepper | ||
1/2 cup | 118ml | Cream of coconut |
1 1/2 cups | 355ml | Broth |
Brown scallion in oil. Add flour and brown for a minute longer. Add remaining ingredients and bring to boil. Serve hot on grilled fish or meat. Makes about 1 1/4 cup.
