1/4 teaspoon | 1.3ml | Freshly ground black pepper |
1/2 teaspoon | 2.5ml | Ground turmeric |
6 teaspoons | 30ml | Potatoes - diced (large) |
4 teaspoons | 20ml | Tomatoes - sliced (large) |
1/2 cup | 118ml | Water |
2 cups | 320g / 11oz | Frozen lima beans |
Salt to taste | ||
1/2 cup | 8g / 0.3oz | Cilantro leaves - for garnish |
In skillet heat oil over medium heat for 1 minute, add onions and fry for about 1 minute. Add garlic and ginger and continue frying for 1 minute. Add ground spices, mix well and add potatoes and tomatoes along with water and cook covered for 12 minutes. Add lima beans, mix, and cook for 5 minutes. Just before serving add salt and garnish.
