Banana Soynut Bread

Recipe Ingredients

1/2 cup 99g / 3.5ozMargarine or shortening
1 cup 198g / 7ozSugar
2   Eggs
1 1/2 cups 355mlBananas - mashed
3 tablespoons 45mlVanilla soymilk
2 cups 125g / 4.4ozFlour
1 teaspoon 5mlBaking soda
1/2 teaspoon 2.5mlSalt
1/2 cup 73g / 2.6ozRoasted soynuts - coarsely chopped

Recipe Instructions

Preheat oven to 350F. Coat a 9 x 5-inch loaf pan with vegetable cooking spray. Mix shortening, sugar, eggs, bananas and soymilk with electric mixer. Add flour, baking soda and salt. Mix well. Stir in soynuts. Pour into pan. Bake 1 hour or more, until knife inserted in middle comes out clean.
