Recipe Ingredients

1 1/4 lbs 567g / 20ozBoiled potatoes - peeled and mashed
1/4 cup 15g / 0.5ozCornstarch
1/4 cup 40g / 1.4ozRice flour
  Salt - to taste
  For The Green Pea Filling
3/8 cup 88mlOil
1/2 teaspoon 2.5mlCumin seeds oil
2/3 cup 157mlFrozen green peas - blanched
1/2 teaspoon 2.5mlChile powder
4   Green chiles - chopped fine
1/2 cup 20g / 0.7ozCoriander leaves - chopped fine
1   Ginger - julienne
  Salt - to taste

Recipe Instructions

Add cornstarch, rice flour and salt to the mashed potatoes and mix well. Heat a little oil and season with cumin seeds. When they crackle, add green peas and all the remaining ingredients. Cook for a while and remove from heat.

Divide the mashed potato into lemon sized portions. Roll into cup shapes and put a little green pea filling into each. Close the cups and shape into patties.

Shallow fry in oil on a hot tawa over medium heat until brown. Serve hot with mint chutney.
